So, with kingfish from Ruakaka, mussels from Mills Bay and world-famous salmon from Mount Cook, NZ is really giving. For starters, North Island octopus is grilled for a perfectly crispy finish, salmon is dressed with a kombu butter and oysters are adorned with a chardonnay vinegar. They also have a venison tataki and goat cheese croquettes - fish isn't the only thing they've perfected!

As for mains, bigger fish like crayfish and blue cod glide into the spotlight. Fish has also mastered the art of slow-cooking with a lamb shoulder so tender it melts on the tongue, and beef eye fillet from the grassy plains of Canterbury.
